About This Role

The role

Gourmet Ranch LLC needs a Deli/Meat Specialist in Houston, TX. This isn't a grocery store gig ; you'll be working in a refrigerated production room, trimming and customizing portions of meat for customers. You'll use knives, band saws, and other meat equipment every day. It's hands on, it's physical, and it's precise.

What you'll do day to day

  • Trim and customize portions of meat products using knives, band saws, or other meat production equipment.
  • Count and stack portions on trays exactly to customer and company specifications.
  • Label each portion with the supplied product labels.
  • Read and understand cut tickets so every order is right.
  • Set up the cutting room the way it needs to be before production starts.
  • Keep the cutting room and everything around it clean and sanitized.
  • Follow company GMP (Good Manufacturing Practices) to keep conditions sanitary.
  • Work continuously in a refrigerated environment between 35°F and 45°F.
  • Do other miscellaneous duties as they come up.
  • Your finish time is when the work is done ; that can mean overtime without notice.

Schedule and hours

You'll work Monday through Friday, 8:30 am to 5:00 pm. Overtime is part of the deal here. The shift ends when the work is complete, not when the clock says so.

Who you report to and work with

This role has no supervision responsibilities. Internally, you'll work with employees, sales staff, and management at all levels. You'll be expected to handle those interactions professionally. There are no external relationships for this position.

What you need to bring

  • Skilled as a specialty meat cutter using knives ; this is required.
  • Minimum of 1 year experience as a meat cutter.
  • Ability to work in a production environment where speed matters.
  • Ability to read and understand customer specifications.
  • Basic math functions.
  • High school diploma or GED is preferred, not required.
  • Knowledge of poultry, beef, lamb, and pork products including USDA grades and standards.

Skills that'll set you apart

  • Experience with band saws, laser portion machinery, or other meat production equipment.
  • Knowledge of NAMA guidelines and product cut numbers.

The physical side of the job

You'll be on your feet continuously ; standing is a constant here. You'll walk occasionally, sit occasionally, and lift things throughout your shift. Here's how the lifting breaks down: 1 to 10 pounds occasionally, 11 to 20 pounds frequently, 21 to 50 pounds frequently, 51 to 100 pounds occasionally. You never lift over 100 pounds. Carrying follows a similar pattern. You'll push and pull frequently. You'll climb and balance frequently. You'll stoop, squat, kneel, bend, and twist frequently. Reaching above shoulder happens occasionally. Grasping objects is continuous. Manipulating objects and manual dexterity happen frequently.

Pay

The expected base rate for this role is between $19.00 and $20.00 per hour. Your actual pay depends on your relevant experience, education, specific skills, and other factors as applicable by law. This role is also eligible for overtime compensation.
